In an industry that's rife with fly-by-night, trend-chasing wannabes it's reassuring to see some operators rise above the hubbub and confidently nail it every time. Legendary Melbourne restauranteur Con Christopoulos is one of those people.
The man behind some of my favourite Melbourne haunts including City Wine Shop, The European and Siglo is putting the finishing touches on his newest venue, the Paris-meets-spaghetti-western French Saloon.
Yup, that's right 'saloon' not 'salon'. It's Con's nod to the Sergio Leone Dollars trilogy, and a dream he's held for many years. Once again Christopoulos and his business partner, Josh Brisbane have gone into biz up with European exec chef (and Kirk's Wine Bar co-owner) Ian Curley who tells me to expect "confident bistro". I had an exclusive viewing at a recent private dinner in the space a couple of weeks ago and I'm pretty sure the French Saloon will become yet another legendary venue in the Euro stable.
